Bacon wrapped scallops. You can wrap them at home and sauté them quickly on the stove.

I also thought about crab cakes baked before go over and warm in crockpot. Other is seafood paella made before hand just served in crockpot.

I thought about this too. But the logistics may be tricky for OP. The host may not have a pot big enough or a burner available for a huge pot (if OP brings her own). Plus that is super messy, especially if feeding a large group indoors. If it’s 8 people or fewer perhaps

My neighbor made gumbo last year and it was delicious. She gave me the recipe but I have not tried it yet. I think that is you had the shrimp at the last minute to the crockpot it would be okay, since the shrimp is a small part of the whole recipe.
