What don’t you understand? Macaroni and cheese is a great main dish, lots of protein. I make a great macaroni and cheese that one of my adult kids requests whenever he’s in town- says it’s his favorite.
I’ve never really understood why macaroni and cheese is listed sometimes as a side dish, it doesn’t make sense to me. I think of side dishes as consisting of mainly vegetables.

That looks really good.
I have trouble finding broccolini - which I prefer to broccoli, especially for special dinners
MOM’s and Trader Joe’s usually have it.

I suspect you have never had good macaroni and cheese. I bet you think all macaroni and cheese is made with a powder that turns into and orange liquid-y “cheese.”
