Have you thought about dried corn? It’s so easy to you add a tablespoon of butter and some sugar and just heat it.

OP, you need to find out what your host wants.

I love that corn pudding, and so does about half of my family. But the other half thinks it's gross/too much like dessert.

Some traditionalists really just want a bowl of plain boiled corn with butter and salt.

I would ask the host.

I bring corn pudding to friendsgiving every year and it's one of the first things to go. Even the low-carb people seem to like it.

Does your family view the corn as one of the "healthy" vegetables. If yes, I think the succotash suggestion would be my go to. If your family doesn't care about healthy, corn pudding is amazing.
