East Asia - Toyko, Seoul are great for solo female travelers. Extremely safe cities.
If jetlag is an issue I'd do southern Europe since you don't like the beach. I'd consider Mexico City but if you are the type to like walking around at night in a big city there are some places that are safer than others and you might want to skip it to avoid the stress of figuring that out.
