A good knife sharpener is not cheap and I would rather have consistently sharp knives I replace every 10 years than expensive knives than are sharp one month out of 12.
I have over 30 knives for different purposes. They remain sharp a lot longer than a month.

I have Japanese knives and a Japanese whetstone but have been sending my knives out because I haven’t gotten around to learning myself. Do you have a good tutorial that you can share? There’s something about the angle of sharpening that is different for Japanese knives.
