You're focusing only on cured meats, which would fall in UPFs, but overall Americans are packing away more highly processed junk foods than ever before.
I'm sure people have consumed cured meats all throughout history. But that was also offset by large consumption of freshly made breads, fruits, vegetables, and other raw ingredients they were minimally manipulated simply because modern food science and manufacturing as we currently know it didn't exist.
And look at the link above. Despite their healthy Mediterranean based diet, why are Italians top 10 for pancreatic cancer? Too much consumption of cured meats?

I also personally think that the hysteria over cured meats might be overblown. Italians eat a lot of cured meats and don’t seem to have significantly higher cancer rates (once you adjust for increased smoking rates). Americans just overdue everything and then have to make a big deal about cutting it out entirely when in reality you could eat a moderate quantity once a week or so and probably be fine.
