OP, you can also choose to believe he's not telling the truth, because he's not in his right mind because of the dementia.
You will never know the truth because this is absolutely not something you should ask your mom about.
You can also choose to accept that even if the affair actually happened, a) it's not about you now and it wasn't about you then, and b) your parents' marriage is fundamentally their business, and not yours.
Have some compassion for both your parents as imperfect people, and try to enjoy what time you have left with them.
