I love when I eat a high fiber diet. Lentils and beans are so much preferable to me than meat generally. I make a great lentil stuffed pepper - I sautee whatever veggies I have (this week it was mushroom, zucchini, Serrano chili), add a can of diced tomatoes, a whole grain of some sort, cooked black lentils, and feta, dill, oregano, lemon juice. Load it up in a bell pepper half and bake like any other stuffed pepper. Delicious!
