I like these cauliflower thins from Trader Joes. I toast them like bread.

GG crackers? They kind of taste like cardboard but very low carb.

Chaffles! https://www.wholesomeyum.com/keto-chaffles-recipe/

I add almond flour and they don't taste or feel eggy at all. I use a cute little dash waffle maker, and split a batch into two waffles (one will overflow; learned this the hard way). Perfect for your "toast" w/ tea.

The "recipe" I use:

3T whole eggs (https://vitalfarms.com/pasture-raised-liquid-whole-eggs/)
2T almond flour (amazon.com/dp/B07L9Q45HG)
1/4 cup shredded mozzarella

That's it. Baking powder might make them fluffier, but if you're going for toast texture, probably not necessary.

Just do it in two batches, or you'll have a mess. If you only want one, you can fridge the other and toast it for tomorrow's toast. Hope that helps!

Anonymous wrote:I used to have toast and cheese and fruit for breakfast every morning forever. Then I started getting pre-diabetic markers, and my doctor said I should not be having fruit and bread as my first meal and recommended that I think of breakfast as lunch instead. I was SO opposed to that, fought it for so long. Then I started intermittent fasting, and my breakfast shifted to 12pm, and kind of accidentally I started skipping the toast meal and instead just had lunch -- eg salad at the office, or leftovers or omelet at home. And it's been SO great. It's an easy way to cut calories, I have far fewer sugar cravings through the day, and my pre-diabetes has receded. Highly recommend that you just rethink breakfast altogether.

OP is pregnant! FCS

I love almond or peanut butter on apples or celery. Add raisins for ants on a log.

Use thick cheese slices and put almond butter on it.
You will get used to it and it is really low carb.

Maybe try this almond butter bread (with more almond butter on top)?

OP. I like carbs and bread too! I started crying at lunchtime because I just want to eat a sandwich. Low blood sugar does strange things to a woman.

Thank you for all the suggestions.

I would probably cry too in your situation! I hope you find a low carb/keto bread that works for you and are able to get back to your favourite toast after you give birth!

I don't have any good suggestions for you, but I feel for you, OP. I also have reactive hypoglycemia when pregnant. I actually fainted from low blood sugar after the GD test.

Part of your issue with your current breakfast may be the lack of protein. You might be able to better tolerate the bread and almond butter if you also had something with protein, like a protein shake or yogurt.

I like greek yogurt with chia and a little bit of honey for breakfast. You could swap the honey for almond butter. It won't be warm like toast, but you'll get the almond butter flavor.

I'd also try cloud bread.

Wouldn’t whole wheat bagels be the opposite of low carb?

What a great idea! I'm GF and that sounds like a great alternative to the crappy GF toast I buy.
