This is simply not true. Art history majors have prospects that are as good for entry level jobs as other candidates, as long as you've gone to a decent undergraduate institution.

The OP's kid is graduating... it's a little late to introduce more classes into the mix. And, I'm guessing the OP's kid doesn't have the chops to handle quant stuff which is why we are here.
Your other advice is to what.... do more schooling?
