I like putting on salt and pepper, dipping in egg and putting on breadcrumbs.

Or chicken piccata or marsala is delicious.

I like this recipe but use diced chicken breasts instead for salt and pepper chicken Vietnamese style:

Pound thin, salt, pepper, dredging pinko and pan fry with a little oil. Make a Katsu sauce (ketchup and hoisin sauce). Serve with salad and kewpie sesame dressing and miso soup. So comforting.

Best way I've found to get fully cooked moist breasts is he air fryer. I don't know how/ why, but it's amazing.

If you have time to marinade, soak in buttermilk overnight. I have had so many people say it's the best chicken theyve ever tasted.

There are dozens of bottled meat marinades in the grocery store. You can choose from Italian, Asian, Indian, etc. and most of them are pretty decent.


If you cook chicken cubes for 40 minutes at 400, they’ll be saw dust

I also prefer chicken thighs. If I buy breasts, I cut them up, marinate (usually soyaki), skewer up and give to DH to grill.
