Tonight: Chickpea tikki masala with rice and nann bread. Cucumbers and tomatoes on the side as well. The chickpea tikki masala is from a pouch you just heat up. The rice is 90 sec in microwave.
Tomorrow: ricotta/spinach ravioli with homemade Alfredo sauce. Broccoli.
Thursday: black bean quesadillas with avacado/tomatoes on the side
We are not vegetarian but eat vegetarian most of the time.

I made beef with veggies in the Dutch oven.
Onions, beef, peas and a bit of green beans, with whole canned tomatoes cut up. In the oven for a few hours, and mashed potatoes and DH and I should be good till Thursday.

Saturday - chili
Sunday - leftover chili
Monday - chicken tacos (instant pot chicken recipe)
Tuesday - nachos with the leftover chicken
Wednesday and Thursday - italian beef in the crockpot, green beans
Friday - something from the freezer - costco chicken nuggets?

We always cook one night to have leftovers the next and fill in with single freezer meals. It makes it possible for us to eat out very rarely.

I have 3/4 head of cabbage to use up.

Tonight we had pasta with cabbage, onion, carrot, pesto, and sardines.

Tomorrow, maybe a cabbage stir fry with rice. Might add Costco frozen tempura shrimp or tofu.

Wed - bean, cheese and veg quesadillas.

Thu - turmeric salsa rice and beans with some kind of vegetable.

Omelet with tomatoes and leftover vegetables
Ground pork and mushrooms with shallots and soy sauce on top of ramen noodles and chicken broth
Navy bean soup and ham
Salad with green beans and olive oil tuna, hard boiled eggs and cherry tomatoes
(trying to diet a bit before going on a tropical trip soon)

chicken thighs rice green beans (may sub root vegetable fries, my kid has been tired of rice lately)
veggie sausage pasta (mix of sweet italian and andouille with peppers, broc, asp, and pasta)
beer battered cod with salad and roasted gold potatoes (whole foods pre bought just goes in the air fryer and then potatoes roasted with OO and 21 seasoning salute from TJ)
smash burger tacos (trying out the viral recipe as a switch for burger night so that on weeks we have tacos, if we like this recipe, we can make these as well to use all the tortillas in a pack)

eat out or bacon egg cheese biscuits with fruit on Friday.

I did stuffed poblano peppers with ground beef, rice, black beans and cheese. Turned out great.

LOL yes I'm the PP above who wrote "some kind of freezer meal." I'm not even going to be home to cook Thurs due to a city meeting, and then Friday is usually just leftovers and/or chicken nuggets for the kids.
