Here are the things that facilitated me eating more salad:
1) Annie's Goddess dressing - not the other brands.
2) Brianna's French dressing - a basic vinaigrette but great flavor. My older kid loves pasta salad and we use this to dress it.
3) The refrigerated ginger-miso dressing that is in the sushi section of Whole Foods - basically mimics a sh*tty sushi place salad dressing.
The only other thing I would strongly advise is getting a mezzaluna to chop your salads like Chopt etc. does. For me, it made it easier to eat the salads, which also felt more combined. I have this one:
