Did 10 days in Scotland in summer 2018, it was sunny and we had only one rainy day in early August. We experienced no air conditioning on our travels, and I was overheating often, except in our air-conditioned car or hiking deep in a glen.

Ecuador is having security issues so would skip it

Norway is beautiful in summer - you can find flight deals on SAS to offset the cost once you get these

Iceland!

Closer / less expensive would be Nova Scotia - PEI and Cape Bretton Island are great. Ferry from Maine or fly to Halifax.

On the colder side but definitely swimmable. It’s beautiful up there. We love the Lake of Bays area.

I spent 2 weeks in Galicia last summer. Weather was great- warm enough but definitely not hot.

OP didn’t say they were on a budget. It’s expensive but you won’t see the junkies that overrun Kathmandu.

I’ve been to Tibet a couple of times, and Nepal. I don’t think l’ll go to Bhutan specifically because it’s only for the 1%. It’s a turn off for me.

Much of South America. Peru has the most to see, and you won’t have to spend much time in Lima if you don’t want. Argentina is nice too- Mendoza and the wine making areas. You can take a ferry from Buenos Aires to Colonia in Uruguay, a UNESCO site.

Another nice thing about Scandinavia and other norther spots in summer is very long days. It stays light until 10pm, and there are lots of things to do in the evening, so you really feel like you are making the most of your time.
