One thing I've had that was OK was peas with prosciutto. You crisp up some prosciutto and toss it with lightly cooked peas and some olive oil.
There are some delicious Indian dishes with peas - keema matar, mutter paneer, aloo mutter.
Fresh peas are great in salad, like peas, radish and mint.
Also, pea shoots are one of my favorite greens, I put them on salads, sandwiches, soups, stews, main courses, pizza.
