I’d do seafood. Seems closer to what the pilgrims would eat. Codfish balls or crab cakes.

My kids hate corned beef and cabbage so every year for St. Patrick’s Day I fry up fish and chips. Seems like they could be fun for Thanksgiving too.

Yes - with lots of meat on the bone, so delicious in soups. They also sell so much more than just ham

We all love Thanksgiving sides, so we sometimes do just those. Other years we make a chicken.
If my family ate duck, I would make that, but sadly I am the only one to eat that.

Korean short ribs- la galbi style. Buy marinated ones at h-mart, throw on the grill or in the oven and enjoy. If you use the grill, there’s very little cleanup which is a win for everyone.

My teen would be so pussed if we didn't have turkey.

Have you considered just cooking a turkey breast - smaller, easier, juicier. Maybe season it it so you'll enjoy it.

Honey baked ham is also a big hit.

When it’s just a small group of us, my DH smokes turkey legs. I realize you said no turkey, but smoked turkey legs are much more flavorful than a whole roasted turkey.

Otherwise I’d likely do prime rib.
