Also, I love Thimble cookies (maybe thumbprint cookie is more common name), and you can fill them with different things. We always do lemon curd in some and raspberry jam in some. If you want to be fancier, Linzer cookies are the same concept, more advanced to make. But can use a range of fillings from lemon curd to jam to Nutella.

They’re pretty good for a Passover dessert (which comes with constraints on ingredients - no wheat flour - or leavening, ie baking powder or baking soda) but I imagine most people would rather have a more traditional flour-based cookie.
