I really try not to yuck someone else’s yum, but that was my thought exactly. Lime juice, balsamic, and jalapeño in gazpacho?? It’s Spanish, not some strange Italian-Mexican tomato concoction.


Maybe that is why the OP is complaining that theirs is bland. This is similar to an Alton Brown’s recipe and it is very refreshing in the summer. And not bland. I love Bloody Marys.

I use a cubanelle pepper usually. But sherry wine vinegar is a must. I see yours turned out ok after all, but I wouldn't sub the sherry wine vinegar for balsamic and definitely not for rice. And a red onion has more flavor than a white or yellow onion.

Add a green pepper. It's the only time I ever cook with a green pepper and it does give that kick.

Nothing wrong with adding more salt. Gazpacho is cold which means more salt than usual as the chilled temperate dilutes flavor.
