Perhaps. But I'm willing to wear the title if it means we can enjoy the vacation during normal hours instead of from 3 am - 3 pm because everyone's jet lagged for the entire time. Why not try to alleviate it a bit?
I think it's ok to tell your 12 and 14 year old what to do. The 19 year old - yeah I guess I can't MAKE him do what I say -- can't make anyone do what I say, really -- but hopefully they also want to enjoy the vacation and are willing to do their part.
Even if people are operating on a 3 am -3 pm schedule, it will only be for a few days and they are old enough to power through the fatigue. If they need to catch naps or be exhausted for dinner, it's ok.
Have you traveled with your family that involved jet-lag before? Our family has a day or two of exhaustion - we use those early few days to ease into our location. We do maintain a meal/sleep on location time as best as possible, but that does have to be nudged each day. Adapting to your time zone and location as well as your travelers is the key to our family enjoying trips together.

This. Trying to control how your family spends their time on a plane will only cause misery for you and them. If I were your 19 year old I would laugh at you and promptly watch 12 hours of movies. People will have the jetlag experience that they do--let the chips fall as they may.
I hear you, but I'm spending close to $40,000 on this vacation and I will be damned if everyone is done for the day at 3 pm and then awake at 2 am for the entire trip. I think asking the family to try to alleviate jet lag is a reasonable request. I can't control what they do, but I can sure as hell make a strong recommendation.
