Why don’t you keep this simple and pick something from your list? Price a few options out on Google flights and hotels, then pick the best option. Best to book airfare asap.

From your list, I would do these:

I would do Norway and Denmark too plus Croatia.

Write a bunch of attractive locations on slips of paper, and pull one from a hat. When you choose the one you really want to see, you won't want to "try again."

I say focus on one city with maybe a second stop outside the city for a few nights for hiking/nature.

We've fallen in love with walking trips -- self-guided hikes but the tour company organizes accommodations/food and transfers to trailheads. I know you're not interested in Australia, but this one in Tasmania was fantastic.

Some of these crazy people are WAY too close for my comfort, but Iceland moves pretty quickly to set up safe viewing areas and parking lots. This was the early crowd of risk takers.

I vote for Crete. It's a big island and you can get beaches, mountains, villages, whatever you want. I'm not sure how the flights are but you could always do direct to Athens, spend a day or two there sight seeing and then move on Crete.

I just got back from Paris and it was insanely crowded. Am hearing the same reports about Italy and Greece and Spain. I would NOT go to the prime European destinations right now. I LOVED copenhagen and stockholm in the summer. And I would suspect that they are much less crowded than southern europe.

From your list, I’ve only been to Portugal, Morocco, Cuba, Peru/Machu Picu.

I’d consider Portugal if you’re into culture, history, nature, hiking, food. The Algarve coast is pretty spectacular. I was just there. If I had would hiked the Fisherman’s trail. Visit Lagos and Salema. Eat seafood. Listen to fado. Visit historical sights in Sintra, Lisbon.
The only thing missing maybe is great art.
