A stick of butter to brush and baste a whole roast chicken is not that much. As others have noted, the drippings end up in the bottom of the pan. If you were an experienced cook, you would already know this.
Paula Deen was diagnosed with Type 2 diabetes and has released a number of "slimmed down" recipes, so she too makes all sorts of food, including healthy food. Her last cookbook (I think) was an Air Fryer cookbook.
