Yes- was going to suggest this too. My latest version for @2 servings:
2 cloves garlic, finely chopped
@1.5” piece fresh ginger root, peeled and finely grated (less for less kick)
1 tsp (?toasted) sesame oil
Squeeze of gojuchang or hot sauce
1.5 Tablespoons low sodium soy sauce
@1-2 Tablespoons chunky natural peanut butter
(Optional, dash of tahini)
@1 spoon water as needed
Mix and refrigerate. It’s great with thin spaghetti made ahead of time, topped with shredded carrots as well as hothouse cucumber (I remove some of the seeded fleshy part).
