OP here, I decided to fly into Dubrovnik and take a few days of PTO to be a tourist there, then spend a week in Mostar mostly working, then another few days of PTO in split. Coastal Croatia is so beautiful, but hotel prices are just too high for a working vacation IMO. Mostar is extremely reasonably priced though and seems like one day of PTO there should be enough to do all the sightseeing, so I won’t feel I’m missing out if all I do the rest of the week is walk around the old town and try different restaurants. I’ll report back on how it was

I was in bogota last summer (August) and the weather was incredible - 50 to 60 and cool. A lot to see and do. Would recommend if you speak Spanish

I was going to suggest Medellín too. It’s very safe, safer than many other Latin American destinations. Buenos Aires is also ok, but maybe other destinations will have better weather.

This city and also Mexico City sound lovely! My only concern in July is seems like it’s very rainy?
