Girl, I'd be making whatever the hell I love to eat for Christmas - turkey, mashed potatoes, stuffing. And toss some lamb chops in a crock pot on low for them (after a quick browning on the stove). Like 2 for each person. They can eat mashed potatoes. If you desire, drizzle little equal olive oil and worchestershire on chops in crock pot as seasoning.
Cooks fast in maybe 4 hours on low.

Why can't they have roasted meat? Unless they are vegetarian- then they are being ridiculous to say you can't serve this with roasted potatoes, and other gluten free sides...

Seriously, most special-occasion mains are roasted in the oven: beef, lamb, ham, turkey, duck, goose, capon, salmon, sea bass. If that mode of prep is out, what's left? OP has to slave at the stove frying scallopini or whatever? F^ck that.

Gluten free pasta? DD’s 4 kids have gluten sensitivities, a couple fairly severe. Evidently gluten free Mac and cheese made with velveetah is fine.

Also shepherd’s/cottage pie, soup or chili.

Do Parlla, and then you can serve it with fish/seafood lambchops.Roasted Brussel sprouts w nuts and cranberry is a good side.

Beef tenderloin/filet mignon with a shallot, garlic and mushroom sauce
Mashed potatoes made with olive oil
Salad -Italian , croutons cheese n the side
Grilled asparagus or broccolini
Ratatouille


If beef is a no, I’d do chicken scallopinis or scallops in a lemon butter sauce

No they aren't vegan, they just don't like those meats apparently and are concerned there won't be other options (e.g. take out) if they aren't pleased with what we make.

Make a fancy roast for the rest of your family and get a Peruvian chicken for your picky in-laws (reheat with the roast). Gluten-free sides are not a problem, you said. Done.
