Vegetarians deserve as much thought for their meal as meat eaters. My eldest (now an adult) is a vegetarian since early childhood. When she hosts, there’s a clear main and complementary sides, just as you would plan for an omnivore’s meal.
What I actually love about eating meat is that the main dish doesn't have to take a lot of thought. Roasting a chicken (I don't do turkey) is much easier than any vegetarian main I've ever made. When I was a vegetarian I did a lot of one-pan dinners.

Finished the filling and working on the onions. Easy but slow going. The mushroom filling is very good but not mind blowing. The walnuts add a nice and needed texture. I feel like there's another texture missing but maybe that's what the puff pastry does for it. And making the filling in advance might help the favors come together a bit more. I opted against the sauce but do think now that it might need a gravy.
