I’ve had it at someone else’s house as cilantro lime rice and that was quite good (I didn’t make it and don’t know what recipe) and I use it as “rice” sometimes in Spam Fried Rice. It tastes somewhat sharper but it’s pretty good and it’s healthier than cauliflower. I like “pantry” meals sometimes.

My husband eats it all the time as a substitute for rice. When that smell of cauliflower rice permeates the kitchen, I want to run out screaming...everytime!

Yes, I cook it with the rice. Usually, I heat it in the microwave for a minute so it’s not frozen solid, and add it on top of the rice, when I add the rice to water. Bring all to boil and then cook normally, sometimes add a few more minutes to cooking time. I also add a bit more salt than I would if I wasn’t adding cauliflower. When rice is done, mix it up so it’s mixed with the rice.


I just add it frozen about 5 minutes before the rice is finished cooking..still just a bit of liquid in the post.

Yes, this. A similar idea - get a biggish teflon pan, spray with a bit of olive or coconut oil, and pan-toast till an appetizing color with smoked paprika and a little salt. Great as an alongside with grilled anything, or as PPs have said with Indian, Thai etc. Getting much of the water out improves the texture IMO.
