Because they are convenient.
And while people complain about the waste, that little plastic cup is not more wasteful than the paper takeout cup that was going to end up in the trash (you bring your own cup or compost the paper one? Great, but most people don't)
We don't have a Keurig, but it's because of taste, not waste

Yep I have a Moccamaster too with a Capresso grinder. Our coffee is heaven. We grind fresh every day or two.
