Roasting concentrates the flavor. Perfect for less than perfect fruits.

Yes! I make them weekly and use in scrambled eggs, salads, toss with a little pasta for the toddler's dinner, etc.

I used to roast tomato slices on a low heat until they are partly caramelized and firm. Goes well on anything.
