I do this: https://shoppingwithdave.com/costco-yakisoba-noodles/ topped with a frozen salmon fillet all the time.

I have one of those Hamilton breakfast sandwich makers and do an egg sandwich on w wh English muffin a lot too. I add a side of fruit to make it feel like a light meal.

I am happy for you that you enjoy this lunch every day, truly. But this sounds like the most bland flavorless not-tasty lunch I could imagine. No fresh fruit or veg, no sauce or spice or dip or sweet or sour. Mostly mushy except the popcorn. Pretty joy-less. But I truly believe we are all different and that this is your ideal meal. Just eye opening to me how someone could have such opposite taste to my own.



I was thinkng the same thing. Sounds like a dreary existence.

I eat leftovers for lunch most days. I'll sometimes repurpose it - eg if we had tacos for dinner, the lunch will be huevos rancheros type thing with the same beans, fillings, and an egg on top.
I work from home, so I prefer to do no/ minimal cooking at lunch time.
