Thanks - I'm digging the idea for hard boiled eggs, need to get into making them on weekends (how long do they last in the fridge). Kids are fine with what they eat already, just want options for myself.

Plain greek yogurt with some nuts thrown on top.
Once the weather gets hot, I like overnight oats in small mason jars.
Low fat mozz cheese sticks, nuts, clementine.
Trail mix and banana.
Leftover dinner.

I make egg muffins (scrambled eggs with mix ins like cheese or spinach baked in muffin cups), and throw them in the freezer, which defrost in the microwave, add a banana.

PB on whole wheat cinnamon raisin toast. Somehow in my mind this goes with an apple.

Greek yogurt with frozen berries.

Is your objection to eating what the kids eat that you just don’t like it? Or are you looking for something specific nutritionally like more protein or less carbs or vice versa?

I like a toasted piece of sourdough with half an avocado smashed on top, a little sea salt and pepper, and a drizzle of olive oil. Or a smoothie with frozen berries, banana, oat milk, and almond butter. Sometimes I bring the frozen steel cut oats from TJs to work and microwave it in a mug, mix in a ‘just one serving’ TJs omega trail mix, and add a little honey.

Hopefully your kids are eating a heathy breakfast- in which case, you should eat what you are already preparing them- or at least incorporate some portion of what you are making them.

If that isn’t an option, scrambled eggs, toast (with various spreads), yogurt, oatmeal- all take just a couple minutes. Honestly, breakfast is the easiest meal of all. Even steel cut oat are stupid easy. Those take more time that rolled old fashioned oats, but just put the oats and water on low when you wake up. By the time time you are dressed and ready for breakfast they are done.

I eat Fage, blueberries and pb2 powder every morning from 8:42 until 8:45 when we run out the door. Fast and lots of protein to keep me full.

I also make muffins using simple mills banana almond mix (Whole Foods/safeway), 4 scoops of vanilla whey powder and blueberries.

Yes, sometimes I make homemade banana or apple muffins on the weekends, but not that often. Usually, don't find time on weekends so will do store bought mini muffins. If I have the homemade kind, I also will eat them and freeze the leftovers. I'm not too worried about what my kids eat though and one is a very difficult eater (also with sensory issues).

Finding time to bake on weekends is tough though depending on what's going on and getting through other errands/activities/cleaning/yardwork, etc. When daycare years are done for my youngest, I will be able to go back to using a house cleaner periodically and that will be a huge help.

Mornings are a mad rush for me too with two young children. I never have time to eat.
This may not be exactly what you asked for, but I found that eating a hearty brunch-like meal (most days leftovers from dinner) around 10:30, and then an early dinner with the kids (say around 5:30) ensures I don't feel the need to eat that early anyway, if that makes sense. I work from home so I can fix myself something at the time if needed, but most of the time it's repurposed leftovers so if you have to take it with you it could just be packed into a container the previous day and warmed in the office microwave.
