Lemon chick peas. I add dill, and serve with rice and a green veggie - usually zucchini.

Adults don't need cow milk. Try a plant milk like soy or almond. If you drink milk because you like it over cereal, vanilla sweetened plant milk tastes even better than milk over cereal.

I had a vegan Moroccan stew for dinner consisting of: onions, garlic, butternut squash, zucchini, chickpeas, canned chopped tomatoes, and carrots, and a few shakes of a Moroccan spice blend. I served it over quinoa with store-bought harissa (Moroccan red pepper sauce) which makes it taste even better. Just search for "vegan Moroccan stew" and you will find tons of recipes online. Also search online for the classic Indian chickpea dish "chana masala" and you will also find online recipes.

Eating vegan/vegetarian is a lot easier if you organize the spices in advance, particularly spice blends. Once you identify and assemble the key spices for each type of ethnic cuisine you like to eat, it is quite easy to make tasty meals.

Organic milk has been around that for as long as I can recall

A gallon is 6 bucks?

I’m in DC and a gallon of organic milk is $6 at Safeway unless it’s on sale for $5. Not sure why this is a surprise.

Oooh her falafel is very good.

Start a garden, OP! Assuming you have a little lawn, that is.

I like the spinach and garbanzo recipe that’s probably similar to one already posted.

I also put chickpeas in my paella (not traditional Spanish, but who cares)

Choke/Chana masala

I roast chickpeas with cherry tomatoes, roughly cut onions, eggplant and serve over couscous

Hummus

Search for vegan ‘tuna salad’ with chickpeas

There are like a billion chickpea recipes out there. I just made sweet potato, chickpea, and spinach curry tonight for dinner. Think about what type of food you like eating, and there's probably a way to shoehorn chickpeas into it.

Meal planning is your friend. Not chickpeas, but we have dried beans at least once a week. I make a huge pot of pintos & freeze portions for tacos, burritos, etc. So I know every Tuesday I’m having some sort of pinto beans for “Taco Tuesday.” It’s routine, but we have variety by switching up toppings or the kind of tortilla or whatever. Tonight was nachos... super simple. Then I usually have leftovers for lunch then next day.

We do a meatless Monday... This week, I made: sautéed onions, mushrooms, garlic, white beans, & spinach with Parmesan and served with baguette. I added poached eggs on top but you could skip that. Cooked some pasta at the same time and mixed the leftovers with pasta for a cold salad the next day at work.

She is in LA the land of the dramatics. Oh no milk is expensive! You’ll survive, look at the people in Yemen, Afghanistan, Ethiopia, South Sudan, Burkina Faso, Democratic Republic of the Congo, Honduras, Venezuela, Nigeria, Haiti, Central African Republic, Uganda. They are all still alive.

I’m in LA living off $37k while going to school full time to get my PhD and gas is $6.59. Congratulations that you don’t have to worry about the price of food. I know many Europeans and Canadians who can’t/won’t drink American milk. We don’t add hormones back home and the taste is really hard for me to drink. Maybe you don’t like mushrooms- is that dramatic?

Then shop at Walmart, Aldi's and Lidl and pick cheaper products. You don't need organic. Or, apply for food stamps.

It’s only organic milk. I don’t pay organic for anything else.

I used to shop Walmart, but now the prices are crazy high. Maybe in your area it hasn’t increased as much, but in California is actually not a great deal anymore. I’ve been going to Asian and Armenian markets for produce and that is still reasonable.
