Agree completely!! I’ve made every type of homemade pizza dough, everything except buy those special ovens, and homemade pizza is almost comically underwhelming. So you put some sauce and cheese on some dough and it was a revelation? Slow 👏🏼 indeed.

And the real Napoli is decidedly very unwoke. Italy is not a woke country - at all. Thankfully.

But I know where OP is coming from. When you've had very good pizza, the everyday pizza can be heavy and greasy by comparison. I rarely have the typical delivered pizza but we do get frozen pizzas from Wegmans which are quite decent, but the real pizzas in Naples...ah! What wouldn't I give for a proper Neapolitan pie!

I like Pete’s. I’m looking forward to Pepe’s. Costco pizza at kids parties has actually turned out to be a motivating factor.

If you don't like NY pizza, but do like Ledo (no s) pizza, (i) you really don't like pizza, and (ii) there may be something wrong with your taste buds.

Ledo’s is literally the worst chain pizza. It’s like a kid came up with the specs: overly sweet sauce, think cracker crust and a disgusting cheese blend.

For sauce, I use my homemade red sauce, so I’ll make meatballs with red sauce on day and then use the leftover sauce for pizza later in the week. I like the Roberta’s recipe but the TJ dough in a bag is actually pretty good if you let it come to room temp before stretching it.

Good cheese is key — including fresh grated parm with the mozzarella.

This thread reminds me of a mom I babysat for in Georgetown when I was in college. The lady was AMAZED at having discovered string cheese. She was like "have you ever heard of this low-moisture mozzarella cheese that comes in like individual packets?"

My husband and I still make jokes about this whenever we buy string cheese.
