When I lived in Italy many years ago, they used to sell this delicious combination that made the best salad: shredded carrot, arugula, radicchio, frisée and walnuts. Shave some Parmesan on top and dress with salt, pepper, oil and ted wine vinegar. I recreate that salad all the time!

Remove stalks from washed lacinato kale and massage with olive oil and salt. Add sherry vinegar. Grate pecorino over the top generously. Toss on some toasted walnuts if you have them. My kids and I love this one.

My lunch salads this week (all from Trader Joe’s):

Salad mix with herbs
Edamame
Crumbled hard boiled egg
Beets (I love their packaged cooked beets)
Shredded carrot
Pumpkin seeds
A little crumbled blue cheese

The two keys I have found to satisfying salads are crunch (seeds) and to salt your salad while tossing it

My go to is greens topped with beets, toasted walnuts, diced apple, a breaded goat cheese round, and tossed in lemony mustardy vinaigrette.

Lemon juice + olive oil + salt == perfect salad dressing. We put it on spinach. Add some shaved parmesan, and maybe some fresh fruit or a handful of nuts, and it's even fancier.

i prefer to use goat cheese, but yes, it's pretty good.
also some diced green apple makes it perfect.

My favorite simple salad is cubed watermelon over arugula, chopped mint and feta with a simple lemon vinaigrette (oil, lemon juice, S/P).

We have spinach salad nightly with the classic French vinaigrette with shallots and oil and vinegar and lemon juice and a dab of dijon mustard. I often toss it with parsley.

I love the idea of exploring more with the salad but this is quick and everyone loves it. The parsley really does add a nice touch.

I seem to go in salad binges. I’ve done:

Kale: baby kale, lemon juice, pine nuts or sunflower seeds, dried cranberries, and goat cheese.

Brussel sprouts: shredded Brussel sprouts, toasted walnuts, Dijon dressing

Current salad addiction: crispiest looking lettuce, cucumbers, cherry tomatoes, Kalamato olives, banana peppers, feta cheese and lemon vinaigrette

Thank you for this recipe! I’ve been using the makoto ginger dressing forever but never had a recipe close to the flavor as this one.

The salad I create is mixed greens 50/50 blend
Heart of palm
Avocado
Mini cucumbers
Shaved carrots
Ginger dressing
Sometimes I add fried onions for a pop of flavor.

I love the arugula salad at Pupatella, and it's easy to recreate:
Arugula
Prosciutto
Shaved parmesan
Balsamic vinegar/olive oil

My favorite.

We love the Charlie Bird salad.

If you buy shelled pistachios and put them in while it’s not too much work. The farro adds such great texture.
