After living in New Mexico for a few years, green chile stew is my favorite. It's called a stew but it's really more of a soup.

It's hard to do it well if you don't have access to roasted green chile (the canned green chiles, while useful for other dishes, are not a good substitute). But if you're ever in NM (or Colorado), try some green chile stew. It's served everywhere, so it's not hard to find.

My favorite is pasta fagioli. Also love French onion soup and mushroom soup. I recently made a mushroom soup recipe from NYT Cooking that was wonderful.

But, bottom line, I devour and enjoy ALL soups.

I made 15 bean soup in the instant pot yesterday and my husband about lost his mind he liked it so much. Sautéed an onion and some garlic, threw in a bag of beans (didn’t use the seasoning packet that came with it), and a ham bone. 45 minute cook time, natural pressure release. Only regret is not soaking the beans over night for gas and my husband likes really really soft beans.
