BBQ stores sell duck fat cooking spray


You cannot get crispy roasted potatoes with spray. Go to Whole Foods and get the jar of duck fat.

Gougeres and shrimp cocktail for apps

Dinner
Beef wellington (individual ones from Silver Palate - so much easier than managing one piece)
Roasted brussels sprouts with bacon
Mashed potatoes
Green salad

We're not huge dessert people so will let the kids get into the massive accumulation of cookies and treats in the pantry

These menus all sound so delicious. I grew up in a house where Christmas dinner was pretty much a repeat of Thanksgiving, so I am enjoying reading all the alternatives and plan to adopt some next year.
