I'm not sure why you expect a 6 y.o do to more than play in the sand and splash in the water at the beach, but you're probably overthinking this. Since your budget is sizeable, I'd recommend the Nickelodeon resorts in DR or Mexico. If you don't want to do that, then Hyatt Ziva is another nice option. I guess I understand the apprehension about all-inclusives, but it really makes things easier when traveling with kids.
