Firstly, you are correct that she isn’t old, only a young middle aged, but you are also leaving the context of her fan base which was tween and teen girls and their moms during the eras tour. The songs she writes are self-admittedly about teens and the way teenager emotions are out of control. She has said this a at some point, yes, as you age, you should process things better than teens and as a songwriter she should be able to write songs that are more mature than teenage emotions or reflections of those emotions. She isn’t doing that, so she is aging out of her current craft.
