When I was a kid my grandfather would come stay at our house when my parents went somewhere. He'd get us on the school bus and relax all day. Then when we got home he'd take us to McDonald's or someplace like that for dinner! Less overwhelming than a whole weekend since there's breaks built in.

Do you have siblings? My sister watched our kid when we went on long weekends.
Or travel with another family and kids play together and parents take turns watching all of them at once.

Also - once they are in middle you can ask friends, and offer a swap.

There are lots of trips that you can take children on that offer fun child only activities so you can get a couple-only meal. Do some research. Highly recommend.
