First, the Quaran does not mandate the hijab. Commentaries suggest women after puberty should be veiled. But the Quaran also suggests the a girl could attain puberty and be ready for marriage at 9, so in practice young girls are forced to veil.

There is no requirement imposed by the school for any student, male or female, to cover their head. The dress requirement - long pants and long sleeves - is for all students.

If you don’t want your child to go on this trip, then opt out. People opt out of field trips all the time for various reasons. Go for it.
