Latest try was his oven fried chicken wings. Followed the recipe. Got the wings from Whole Foods ($$$). Followed the recipe. Only difference was I turned on the convection feature for the last 15 minutes because they didn't look crispy. They tasted baked, not oven fried.
I've given his recipes several tries. I think he's all about diverging from traditional techniques. While it's fun to try new techniques, so far his recipes are batting zero for me.

Anonymous wrote:Every chicken sandwich. Not talking about fried chicken. But when you get it grilled or blackened it's never good no matter how they try to fancy it up with aioli or avocado. I think the chicken pieces are just too thick and not tenderized. Why can't anyone get this right?
