Do avoid kids until you have at least $100k income and a reliable support system. That is either in the form of relatives, a nanny, or a stay at home parent. It’s tough to have kids if you don't have outside help, especially with 2 working parents. It can put lot of strain on your marriage as well.

I recently attended a match day ceremony where students would go on stage and announce where they were headed for residency. Over half of the students had spouses (and a handful even with children!) come on stage with them...

Good for you. You are not an example for overwhelming majority of people at that age. Don’t promote it like it works.
I’m a DP. Married at 27, spouse was 25. We’ve been married over 25 years. What age do you suggest “works” best?
That’s like saying you had sex in high school and it worked out because you never got pregnant.
FYI, 27 is pretty average for marriage.
