Are you Indian?
No, but in high school my best friend was Indian, and her mom taught me how to fry puris.
It is super simple. The secret to making them puff is to push on them on one side as they are frying.

But you have a lot of leftover oil and they aren't that healthy!

What you need is a stash of emergency frozen pizzas:

Those I have! But they get eaten by the teenage boy in 2 bites as a snack!
But Indian leftovers with homemade puri (poori?) went over extremely well! (Teenage boy also had leftover meatloaf and a baked potato.) Thrilled I didn't pick up a pizza.

OK, Day 22. Bought nothing. I'm HUGELY TEMPTED to order in a pizza for dinner. My meal plan failed (meat didn't thaw yet and takes 1.5 hours to cook so I need to punt it to Tuesday) and all we have in the house are leftovers and I'm TIRED of eating stews and leftovers.
But I am not giving in.
We have leftover chicken tikka masala (homemade) that was pretty decent. I can make homemade puri very easily which everyone likes. It's not the greatest dinner, but it will do OK, and if not, I can make some mango sticky rice for dessert which the kids like.
