I'm not trying to come down on you OP, your story is just confusing. And I'm one of the few people in this thread who don't really think it's a big deal for her to miss a week, however I do agree with others that it was really poor judgement not to disclose this week long vacation at the time the internship was offered to your dd.
Also, a few people have asked but you haven't answered, what health condition does your daughter have that requires a vacation? How does that work, is she required a week off every few months? How does this affect her school year?
Actually I think that most people would agree that mentioning the week long vacation at the time of the offer would have been advisable. For some reason it wasn't mentioned but maybe the Op's daughter has found an acceptable way around that through telecommuting (?) I guess a lot depends on exactly what type of an internship this is.

+1. And in the future she needs to inform an employer, even an unpaid internship employer, of her plans once she receives an offer and let them decide whether to still offer her the position.
When I hire an intern (mine are paid) i tell them how long the position is for. I don't expect to find out later that they will be missing 10% of the time for vacation. Obviously illness or emergencies are different.

So the planned week long family vacation was something entirely different than these couple of telecommuting days from grandmothers house?
