Ours is in the mud room/laundry room (which is in between the kitchen and garage entrance, does have a door to the kitchen that closes).

I don’t love it there, actually. Seems to public, and I don’t like the proximity to the kitchen.

However, we don’t really have a better place to put it.

In our old house, we had it in the basement. That was very ideal! In another house, we had it in an unused powder room. That was great too.

Our cat is sadly no longer with us but we kept it in an unused closet designated for that purpose.

My parents have an elderly cat and they keep one box in the downstairs powder room and one in the basement. They are not very social people but all the people they invite over also have cats so nobody bats an eye at a litter box in the bathroom.

If you have a pine pellet litter box then you can just scoop up the poop and flush it down the toilet. Not all cats take to that, though. Nor do all cats like lids on their litter boxes. As long as you scoop the box frequently you should be fine.

Another 2 cats one box family. Ours is in the laundry room off the kitchen. We cut a hole in the door so the cats can get through to it.

Clean it twice a day. Clumping Tidy Cat litter. Totally replace the litter and wash the box once a week or so.

We have all our litter boxes in one place. I don't think they need to be spread out throughout the house. Ours are in the closet under the basement stairs.

Two cats one box. I have about the tiniest powder room you can imagine, but a standard high-sided box juuuust fits between the wall and the toilet. My 2 cats are generously sized and it works fine for them. It helps to have a bath mat or plastic mat to trap the litter.

I have a "spare" Breeze in the upstairs bathroom (old timey bathroom with wall mounted sink and no vanity, so box is under the sink). They hardly ever use it.

So: I'm not sure you need 2. The Breeze is amazing (but alas my cats do not agree...). It should fit in powder room.
