NP and it would not bother me either. My kids see their unvaccinated cousins and unvaccinated friends. The kids are too young to be vaccinated but all of us are okay letting them hang out together and no one is wearing masks now. This isn’t different. Numbers are low. Don’t go if you feel comfortable but you are more likely to come across a lot more unvaccinated people without masks anywhere you go at this point.
Yes you’re going to encounter lots of unvaccinated people but are you sharing a room with them are you staying for days in an apartment with them are you sharing multiple meals using the same bathrooms, kitchen, etc. coming across somebody for 15 seconds or two hours at the airport or a restaurant is not the damn same thing as spending an entire vacation with someone.

Well, the grandparents are the ones allowing the unvaccinated in-laws to come on the vacation. It’s their choice.
So you don't actually have a problem other than you can't control other people. Your DH agrees with you, and the grandparents aren't making a stink about you choosing not to go for an event. As an adult with a child you should fully understand we don't usually get to have our cake and have it too in life.

I am thinking of pulling out and just sending DH. I get that there is exposure in airports, planes, etc. but now I would have to have my kid in a mask at all times with the family. Two of them are in a state where the Delta variant is rampant.
Other than when at home your kid should be masked at all times anyway, so they should be used to it and understand why they need too.

I would cancel. Especially since the grandparents pre emptively said they understand and would cancel. My in laws would be a mess worrying that the unvaccinated adults would make their grandchild sick. I also wouldn’t risk my kid with asthma getting the Delta variant to appease some stupid Maggots.

I had this same predicament- the unvaxxed adults and their baby all got Covid. We hope they finally decide to get backed before we see them next month. So glad they didn’t come down with it when we were around them.

You can blame the CDC. Ridiculous timing to drop all masking mandates. I’m in the Midwest and nobody wears masks inside at all. I went for two medical visits and both of them said they were vaxxed and took their masks off. The receptionist was unmasked and grudgingly put one on when she saw me entering with mine on.
