I suggest keeping a food diary and be honest. Everything that goes in your mouth goes in the diary. Every tablespoon of oil you use in cooking, every coffee drink, etc. You would be surprised how easy it is to undercount calories.

Here is another example of what a daily log could look like for me, using meals I often eat (what I gave earlier were also meals that are in heavy rotation, but here are more). Perhaps these are better!
Breakfast: 2 scram eggs, 1/2 cup roasted sweet potato, spinach sauteed in garlic and 1 tsp EVOO
Lunch: miso soup w bok choy, sugar snaps, mushrooms, tofu, brown rice noodles
snack: veggie plate + dip made with fat free greek yog
dinner: chicken + brown rice + broccoli
