I second baked oatmeal. Budget Bytes and Love & Lemons have good recipes. I usually use pure maple syrup as the sweetener and reduce by 50%.
I make pancake batter from 2 eggs, 1 banana, 1/2 cup oats in the blender (add vanilla extract and cinnamon if desired)
