3)I have a quartz now that I like but it’s probably a hit too busy for the new kitchen in terms of veining. I definitely do not want real marble. Island will not be huge- 7’x4’ with main sink. 3 seats on the opposite side.
4) I have heard that the leathered granite is basically indestructible and that absolute black leathered is not as textured.

Painted islands (like blue which is trendy now) chip mercilessly

Whatever you do, skip the matte granite. That really seems like a trend with an expiration date.
Have you seen "Virginia granite"? It's matte, and it's gorgeous
