Greenville has been a hotspot of covid throughout the pandemic. My estimate is that they will continue to have relatively high covid numbers.
Also, it’s not all that. It’s fine, but it’s not nice enough to risk covid for if the numbers are still high this summer.
I’d either change your plan or make all your plans are refundable so you can see how the numbers are once the time is closer.

Might sound odd, but their zoo is really nice. It's small scale but has really nice exhibits, it would be fun to walk around there.
Restaurants:
Biscuit Head (my favorite)
Tupelo Honey
White Duck Taco
Definitely make a stop at Fiction Addiction (bookstore) too!

We have both been to Asheville several times.
We are focused on Greenville because neither of us has been there before.
Any suggestions?
The reason you aren’t getting many comments is there isn’t that much to do in Greenville. You can go to the small falls and bridge downtown and then you can walk up and down several blocks of the downtown street where there are restaurants. That’s about it. It’s not a destination.
The CDC is still telling people who are vaccinated that they should not engage in nonessential travel at this time. If you go to Greenville you can probably eat out at restaurants, etc., but you will be surrounded by people who don’t wear masks and haven’t gotten vaccinated.
It’s a bizarre destination.
Why must people be so judgmental about locations? We picked Greenville because it is an equidistant drive for both of us. We have been to all other larger cities in the area. We enjoy visiting places that aren't huge tourist draws and I had seen articles in the last few years in the NY Time and the Washington Post so it seemed worth checking out. We have always been able to enjoy ourselves in every place we've been. I was just wondering if anyone had any specific recommendations.
We drove through SC once. I have to agree with PP. It’s a bizarre destination.
