I've done something similar, but use cannellini beans and hominy. I don't use the McCormick's -- I use a combo of oregano, garlic, cumin, salt pepper, and maybe a splash of hot sauce Those hatch green chilis are also good in this. You could also mix in some of the Trader Joe's Salsa Verde.

Here's an easy one my mom used to make:

Pound the chicken breasts out a bit so they are even.
Mix salsa with beaten egg.
Dredge the chicken in the salsa mix, then dip in bread crumbs (can add some oregano, cumin and garlic powder to the bread crumbs).
Bake at 350.
Serve with taco type toppings -- chopped tomato, sour cream, guacamole or chopped avocado, etc. Spanish rice on the side.

Yes, it makes a sort of "gravy" which kids use to pour over their rice. You have to cook it down a bit to get it a thicker consistency though.

My favorite easy chicken dish is to throw chicken thighs in a pot with TJ’s salsa verde (the kind in the glass jars by the chips). Pressure cook for 8-9min or cook on the stove Until done. Shred with two forks and you can serve over rice or as tacos/burritos.
